Pecan Crusted Salmon

One of my favorite things to eat for Sunday dinner is Pecan Crusted Salmon Fillets. My mom used to make salmon loaf when I was a kid and I loved it. This is an even yummier way to make salmon. I loved using old bread and mixing it up with honey and mustard and pecans. It adds a sweet crunch to the Salmon. It is sooooo delicious. It is even great the next day for lunch.

Here is one of my very favorite dinners, baked Pecan Crusted Salmon!
My daughter turned me on to this recipe from ALLRECIPES.com called Baked Dijon Salmon. It has bread crumbs, honey and mustard, and chopped pecans. It is wonderful with garlic red potatoes and fresh fruit salad. And it is pretty healthy (except for the butter on the potatoes) but hey, I'm a butter girl. I can't help myself.

Isn't this Pecan Crusted Salmon just tempting looking?

I start by mixing up the bread crumbs with chopped pecans, a little mustard and honey mixed in...
Here is my adapted recipe for Pecan Crusted Salmon:

Ingredients
  • 1/4 cup butter, melted
  • 2 1/2  tablespoons Dijon mustard
  • 1 1/2 tablespoons honey
  • 1/4 cup dry bread crumbs
  • 1/4 cup finely chopped pecans
  • 4 (4 ounce) fillets salmon
  • Lemon Pepper a few shakes
  • Lawry's Season Salt a shake

Directions
  1. Preheat oven to 400 degrees
  1. In a small bowl, stir together butter, mustard, and honey. Set aside. In another bowl, mix together bread crumbs, pecans
  1. Shake season salt and lemon pepper on each fillet lightly, then  brush with honey mustard mixture, and sprinkle the tops of the fillets with the bread crumb mixture.
  1. Bake salmon 12 to 15 minutes in the preheated oven, or until it flakes easily with a fork.

Then I spread them on salmon fillets and bake....DON'T BROIL!

I added some salad with fresh tomatoes

And a side of fresh fruits...
And here it is!  Pecan Crusted Salmon is a great Sunday Dinner!  It is one of my very favorites.
And garlic parsley red potatoes....yummy dinner!
I like to buy the salmon fillets from Costco, individually wrapped. They are so easy and economical. And they always taste fresh. I am never disappointed. And the salmon is light and flaky and never fishy tasting. This is a favorite dinner of mine.

And I had to make a yummy dessert to go with it. I love this chocolate cake with peanut butter icing. If you want my recipe and how I make this devilish dessert link HERE.  IT IS VERY EVIL GOOD!

Don't you want a bite? You know you want to!  Oh my GOSH so sinfully yummy. I need to invite somebody over so we don't eat all of this ourselves! I know I won't have much self control when it comes to peanut butter anything.

Enjoy this wonderful spring weather!

Easy Pulled Pork in the Oven

My favorite quick way to do pulled pork is of course order take-out from Texas Roadhouse! They have a $9.00 pound of pork and they will include extra sauce and a dozen rolls! It is a steal!

But if I want to stay home and do it the easiest way is to run to the grocery store, buy rolls, and one of these.....

Easy Pulled Pork in the Oven is an easy weeknight meal. It is less expensive than buying takeout and really pretty quick if you do it in the oven. The secret is the tender meat.

I buy one of these, it is a Pork Loin for roasting. It always is covered in these mesh string things. That is why they are easy to find. The meat man said you could even cook this for 1 1/2 hours and it would be good for pulled pork, if you buy a small one. So I tested him on his meat knowledge.

Easy Pulled Pork in the Oven. It looks like this when you take it out of the package. Be sure and look for the web of string. This pork always turns out VERY tender for me. I season mine with Monterey Steak Seasoning and add some brown sugar. I wait till it is mostly cooked to add the BBQ sauce.

My hubs calls them "toaster leavin's" from an episode where Al Bundy talks about his BBQ seasonings on Married with  Children, back in the day. Remember the one where they had a BBQ inside of the grocery store with beach chairs and a blow up pool? Well, it was a pretty funny one.

Easy Pulled Pork in the Oven. It is quick, only a few hours in the oven covered with foil and seasonings and you can have a delicious pulled pork sandwich.

Then I add some brown sugar to the top. Then I add about 1/2 cup water and put foil over the top and let it cook for 1 1/2  hours at 350. Then I check it and cut it apart into 1 inch slices  pulling later. Then I add the BBQ sauce and let those juices do their thing melding with the BBQ sauce together for another 30 minutes or 60 minutes depending on how big it is. Then check to see if it is tender and done.
Hey I found this cool way to use COKE on Pinterest. Do you think it works? I've never heard of coke for a cleaner before.
Some yummy fruits on skewers to go with my pulled pork sandwiches. Blackberries were on sale at my Sprouts Farmer's Market. I love blackberries! I have a few vines in the backyard but they are not doing very well. Bah! I really do think I have a black thumb. But at least my pulled pork turns out every single time! Yummo.

Easy Pulled Pork in the Oven. These sandwiches are great the next day as leftovers too. Or you can freeze the meat in a freezer ziplock bag and eat them in a week!

I toast the bun a little on and sometimes we add some provolone cheese and extra BBQ sauce. It is a delicious meal.
